Winter meal prep for 2 or 4: 5 days of warming lunches and dinners
Cold December and January evenings make cooking from scratch feel like a chore, especially when you are tired and the days are short. Most of us reach for the same few takeout orders, or skip a proper dinner altogether, and the week gets harder than it needs to be.
This winter plan gives you five days of hearty food built on seasonal ingredients you can easily find at the store: a beef and root vegetable stew, a butternut squash and chickpea curry, and a chicken, leek and cheddar savory pie. It also includes a sausage, kale and potato sheet-pan bake and a ham and lentil soup. The whole session takes about 2 hours, and the shopping list is ready before you start.
A meal plan for cold days: warming soups and stews are welcome. Use seasonal ingredients that we can easily buy in December and January.

Questions asked about this plan
Can I freeze the Chicken, Leek and Cheddar Savory Pie before or after baking?
The plan says to freeze the pie after baking. Freeze it whole or in slices, wrapped tightly, for up to 2 months. Thaw it in the fridge before reheating.
How do I reheat the Beef and Root Vegetable Stew without drying out the beef?
Gently is the key. Thaw the stew overnight in the fridge if it's frozen, then warm it in a heavy pot over medium-low heat with a splash of water, stirring now and then. Keep the heat low rather than blasting it, and stop once it's bubbling and reaches at least 165°F (74°C) all the way through. The braised beef stays tender that way, since it's already cooked and only needs warming.
Can I swap the chickpeas in the curry for another bean or pulse?
Yes. Two cans of cannellini, butter beans, or kidney beans will work well in the curry. Drain and rinse them before adding them with the squash and coconut milk, since they only need to warm through. Cannellini and butter beans soften into the sauce nicely, while kidney beans keep more bite and give a slightly different look.
